Resumo: Grande parte das crianças e adolescentes tem se alimentado de forma errada. Os índices de sobrepeso em crianças e adolescentes têm crescido e são vários os fatores que influenciam a obesidade. A obesidade se constitui como um importante problema de saúde pública e a escola pode desempenhar um papel fundamental no processo de prevenção da obesidade a partir da formação de hábitos alimentares saudáveis. A alimentação é componente da história do individuo, da família ou do grupo social. O conhecimento sobre alimentos, a primeiro momento, é influenciado pela família e em seguida pela escola, onde em média as crianças consomem de 25 a 33 por cento das calorias diárias. A escola possui um papel fundamental, assim como o professor e suas atitudes no ambiente escolar. O profissional da educação pode ser o principal influenciador de hábitos alimentares saudáveis, pois passa maior parte do tempo com os alunos e conhece suas realidades. O modo de agir do professor colabora para uma adequada aprendizagem do aluno. Este trabalho tem por objetivo identificar escolhas alimentares de alunos e professores durante o lanche escolar, e se a partir dessas escolhas há influência e estímulo por parte do professor na promoção de hábitos alimentares saudáveis. Foram feitas observações das escolhas alimentares e atitudes dos professores durante o horário do lanche em conjunto com seus alunos de forma a verificar se há possíveis correlações entre o posicionamento dos professores e as escolhas dos lanches pelos alunos. A partir dos dados foi possível identificar as escolhas alimentares dos alunos, refletindo a influência do professor no comportamento dos estudantes. As observações ocorreram no horário do lanche escolar. A cada semana foi acompanhado um ano do ensino fundamental, totalizando quatro semanas de observações. Ao final, os professores foram entrevistados e responderam um questionário contendo sete perguntas. Cabe ao educador reconhecer a necessidade de se trabalhar temas relacionados à educação alimentar e a implantação de projetos que beneficiem na prevenção de doenças e melhoria de qualidade de vida dos educandos. Um obstáculo encontrado para prática dessa atividade agrega-se a falta de preparo e formação para trabalhar com esta área. Sobretudo, o educador deve ser um facilitador, que saiba utilizar várias estratégias de ensino, contribuindo para a melhoria da alimentação das crianças. O professor como influenciador deve ser orientado, capacitado e adepto da alimentação saudável para que seja um exemplo, um referencial, da prática aliada a teoria, para que aquilo que é falado tenha relação com o comportamento. Com este estudo foi possível considerar a importância da capacitação de professores, em nutrição, para o seu bom desempenho na saúde e na nutrição escolar. _______________________________________________________________________________ ABSTRACT
Most children and adolescents has fed themselves in the wrong way. Rates of overweight in children and adolescents have grown and there are several factors that influence obesity. Obesity poses as an important public health problem and the school can play a vital role in preventing obesity from the formation of healthy eating habits. Food is part of the individual´s story, family or social group. Knowledge about food, at the first time, is influenced by family and then by the school, where in average children consume from 25 to 33 per cent of their daily calories on the scholar environment. The school has a fundamental role, as well as the teacher and their attitudes in the school environment. The educational professional can be the main influencer of healthy eating habits, as is most of the time with students and knows their realities. Teacher’s behavior collaborates for a suitable student learning. This work aims to identify food choices of students and teachers during the school snack, and from these choices there is influence and encouragement on the part of professor in promoting healthy eating habits. Comments have been made of food choices and attitudes of teachers during snack time together with the students to check for possible correlations between the placement of teachers and the choice of snacks by students. Observations were made for the food choices of students, reflecting the influence of teachers in the behavior of students. The observations occurred in school snack time. Each week a year of elementary school was watched, totaling four weeks of comments, in the end the teachers were interviewed and answered a questionnaire containing seven questions. The educator needs to recognize the necessity to work on topics related to education and deployment of projects that benefit in preventing disease and improving quality of life of learners. An obstacle encountered to practice this activity adds the lack of preparation and training to work in this area. Above all, the educator must be a facilitator, who can use various teaching strategies, contributing to the improvement of the feeding of children. The teacher as influencer should be oriented, skilled and adept of healthy food to be a referential of practice with theory, so that what is spoken has links with the behavior. With this study, it was possible to consider the importance of training teachers, in nutrition, for their good performance in health and nutrition education.
